The best espresso machines require grind consistency that is above and beyond that with which you can get in run of the mill grinders. You can pull a shot of espresso with an inconsistent grind size but water will force it’s way through grind via the path of least resistance. If you have larger grind mixed in with fine grind it will be over extracted.
